  • 031 4  This book is a great introduction to basic soy cooking FROM THE RAW BEAN . Get into ' meat without bones ! ' Making tempeh is too cool , and this book got me started . It is full of excellent tips relating to all sorts of vegetarian dishes , and the wide range of recipes makes it very useful .

Anyway , on to the food : If you read the New Farm Vegetarian Cookbook from cover to cover ( which , unlike most cookbooks , you can ) you'll learn how to : - prepare beans - make TVP meatballs - make tortillas , bake bread , pizza dough - sprout seeds - make knishes - make gluten - prepare soymilk - skim yuba from cooking soymilk - make tempeh from scratch ( fascinating ; looks very difficult ) The food prep instructions and recipes in the New Farm Vegetarian Cookbook make up a vegan 101 I wouldn't have been willing to read and absorb until fairly recently . It'll be popular with you if you're ( 1 ) already health-minded , ( 2 ) value non-processed foods enough to do the work , ( 3 ) organized food-wise , and willing to do things like leave the beans to soak the night before . There are some quick recipes , but if you're more of a ten-minute cook I'd recommend instead you get How It All Vegan ! or ( even simpler ) the Soy , Not Oi ! cook-zine . Recipes in the Farm book include Soysage , Tofu Onion Quiche , Gluten Roast , Tempeh Sauerbraten , Millet And Peas , Granola and many other hippie classics plus lots of other great soups , spreads , main dishes , desserts , breads , and a small section about pregnancy and having kids as a vegan . I just made their macaroni and ' cheese ' made with nutritional yeast ( Nutritional Yeast , Shaker ( Red Star ) , 5 oz . _ ; a product I've never used much of before but which features in this book prominently . It was much , much better than the OK ( but more convenient ) boxed stuff Roads End Organics sells : Road's End Organics Dairy-Free Pasta Shells & Chreese , Cheddar Style , 6.5 - Ounce Boxes ( Pack of 12 ) . I was glad the recipe worked out because I'd been kind of daunted by nutritional yeast for awhile . After the utility of this book I think I most appreciate the earnestness . Lentil loaf is good . Do not be ashamed ! The Farm cooks also understand you don't want to support the corporate food giants , get your B12 from a pill or fortified anything , or buy a soy product you can't describe the manufacture of . If How It All Vegan is high school , the Farm Cookbook is college . The photograps of commune cooks stirring the baked beans in their mumus are also great . One more point - - if you were to wholeheartedly adopt these recipes and food lifestyle as the book lays out , you would save a lot of money . ( You can tell the Farm folks cooked for economy when they warn you to watch out for added mercury if you buy your soybeans at an animal-feed supply store . ) The way most vegans and vegetarians in the west eat today doesn't represent much in the way of savings , because our processed foods , even if they're made of cheap ingredients , cost quite a bit . ( Think of Yves slices , or commercial fake parmesan . ) These people made awesome food at home from the cheapest , most straightforward and whole foods available . That's cool . Thank you hippies .
      • 001 4  I must admit that just 6 months ago there was no way I could fathom the thought of eating vegan meals on a daily basis , until I tasted a recipe out of this book . Not only was I astounded but I was also insulted . Insulted because one of my own famous recipes that I had made for years ( with meat ) , was up-staged by the vegan recipe I had tasted in the New Farm Cookbook . And to add insult to injury , it took only a fraction of the time to make it ! One of the main things I like about the book is that the recipes are absolutely delicious , simple , and most of the ingrediants can be found in just about anybodies cupboard . From gluten roast to non-dairy cheesecake you just can't beat it . Anyone who wants to change their diet and are skeptical would do themselves a tremendous service to get this book . I have since bought another one in case something happens to my first one . It has changed my life and I can honestly say that it is truly worth its weight in gold . This is why I call it my Vegan Bible .
      • 002 4  I love this cookbook . i've been a vegan for almost five years and have had this since day one . i recommend this book to all vegans just starting out . the recipes are very simple to prepare , and they are basic foods that everyone loves . this is the only cookbook where i've cooked almost everything in the book and liked it all . many vegans starting out may be intimidated and think they don't have many meal options . with these recipes , there are always leftovers that they can be munched on all week long . aside from the simplicity of the meals , the portions are large . i always make the TVP gravy and Sloppy Joes . there is minimal cooking involved and i always have leftovers . for the experienced vegan , there are great recipes like alfredo sauce and meals with nutritional yeast ( an acquired taste - i didn't eat it for a LONG time ) that never get old . Janie's good biscuits are a classic ! another plus is that since the book was written in the 70 ' s , there aren't any special ingredients needed . no extravagant gourmet meals here , you won't have to drive around town looking for kelp powder or mushrooms you've never heard of . highly recommended .

My version is a little older , but I think that little has been changed over the years . It's a bit of a time capsule . It's just a wealth of great , basic vegetarian info . How to make your own tofu , tempeh , etc . In fact , you can still buy tempeh starter from the Mail Order Catalog ( based at the Farm ) , follow the recipe here and you can't go wrong . Most of the recipes are for family friendly , down home kinds of meals , just adapted to the veggie palate . One really gets the impression that many of the Farm folks , having presumably grown up on a sort of 50 ' s homestyle cooking , reworked a lot of this into real family-type , comfort foods . My personal favorite recipe is the Soft Sandwich buns ! Speaking of family , there is a great deal of info here about vegetarian nutrition for pregnant and nursing women , and children . The Farm has been around for decades , and is still going . . . they must be doing something right !

      • 006 4  the New Farm cook book is a must for a vegan's cook book library . perhaps the best recipes in the book are the breakfast baked goods : Who says pancakes have to have eggs in them ! The book offers helpful tips for making tofu , wheat gluten , tempeh soy milk . It also has photos and cute cartoons of the folks at the New Farm commune doing their thing . It offers advice on raising vegan children , and vegan nutrition while pregnant . Most of the recipes are easy and very American style , like cheese-less mac cheese , grilled tofu sandwiches , etc . There is also a section on vegan jewish foods , like knishes , that is great . The only thing I dislike about this cookbook is that it tends to call for powdered spices rather then fresh . . . and you have to admit that nothing beats fresh garlic ! Of course , you can always substitute . For the cookie recipes that called for honey I used a mixture of turbinado sugar and maple syrup . it worked fine ! Buy the book ! You won't regret it ! : - )
      • 007 4  I am ordering my second copy because my first one fell apart after many years of constant use . My children love the desserts . The muffin recipes are excellent - for your body as well as your taste buds . This book has the best recipe for soyburgers . It tells you how to make gluten , and has several recipes for what to do with it . This book tells you how to make soymilk and has recipes for what to do with the left-over soybean mash . If you want to incorporate more soy into your diet , this is the book for you . If you want to put more fiber into your diet , this book can help you . My kids have liked every recipe from this book that I have tried . This is high praise indeed .
      • 008 4  I have used this cookbook for over twenty years now and it is still my favorite . All of the recipies are inexpensive to make , fairly basic , always nutritious and tasty . I have raised six kids on the recipies from The Farm and they universally request the Nutritional yeast melts , the barbeque gluten ribs and the TVP golden gravey . If I have one complaint about the recipies it is that they generally have too much salt in them for the average desk-bound lifestyle . The book was written from the perspective of folks used to a physically rigorous lifestyle . Use less salt in making the dishes .
      • 009 4  I purchased this book after a trip to the Farm in 2004 . What a lifesaver . I wish I would have had this book earlier . Completely easy to read and visually pleasing . The artwork makes this book unique and fun to read . But enough about the pictures , the recipes are fantastic and it's easy to add and adapt to your own tastes . I love the section on soymilk and the TVP section has saved me a ton of money ( I no longer buy premade soy crumbles ) . A must for every veggie kitchen .
      • 010 4  This book contains my all-time favorite ( and most asked for ) recipies . The tofu cheesecake , tofu mannicotti , and chocolate cake recipies alone are reason enough to get this book . Most of the dishes are fairly easy to make ; those that aren't are worth the effort . One note : a number of the recipies call for honey ; if you opt not to use honey , you'll have to come up with your own substitutions .
      • 011 4  I have a BIG collection of cookbooks , most of them vegan , and this is simply the BEST vegan cookbook I own ! = ) Every item I have made from it - was easy to make and tasted fantastic ! Their mock meat recipes taste great to vegans and meateaters alike ! The recipes are simple , usually with only a few ingredients ( which you can easily change a little if you feel like it ) , the steps to make the recipes are so easy to follow I can easily let my husband cook every once in a while and most important the food always tastes great ! ( I have made about 20 of the recipes . ) They even give you instructions on how to make your own soy milk , tofu , tempeh . . . !

      • 013 4  I love cookbooks and I have quite a collection , but this one is the one I keep going back to . It is literally falling apart because I use it so much . There are a few recipes that might seem intimidating , and a few ingredients that might seem odd to a new vegan / vegetarian , but over all it is accessible . It has a great nutrition section in the back , too . The macaroni and cheese recipe is by far my favorite vegan dish .
      • 014 4  Like something out of a time capsule from the early - 70s hippie back-to-the-land movement , this cookbook combines a wholesome , innocent sweetness with floral-psychedelic layout and graphics , and the best do-it-from-scratch soybean recipes anywhere . When this was written , tofu and tempeh and soymilk were not off-the-shelf supermarket items . But if you think you'll skip those recipes , be advised that fresh-made tofu has a subtle but amazing texture and flavor that beats the pants off anything you'll get out of a package ! Based on the diet described in this book , and on studies of the people living on The Farm , the American Dietetic Association gave vegan-ism their stamp of approval , even for kids ( ref : www.eatright.org ) . Buy this book , and see why the Sixties had such a major influence on food as we know it ! And check out the subsequent cookbooks written by Hagler and Bates .
      • 015 4  I have lots of vegan cookbooks , but this one's the best all around . It has easy , normal recipes , like pancakes , banana bread , and french toast . All the foods I thought I'd never be able to eat again .
      • 016 4  I first discovered this book four years ago while cooking for a cafe in the back of a health-food store . The recipes are thorough , imaginative , and yet familiar . Even though its appearance is outdated ( 70s hippy-style ) , I had to buy my own copy when I left the cafe and no longer had it as a reference . I adore the detailed descriptions of making everything from scratch - - even tofu , tempeh , and soymilk , things that us urban folk take for granted in grocery stores today . I rely on the nutritional yeast melty cheese and the chocolate chip cookie recipes to this day , to please my not-at-all-vegetarian friends .
      • 017 4  A lot of the recipes in this book just do not appeal to me , but I have to give it 4 stars for one reason : Tofu Onion Quiche pg 132 . It is unbelievable . . . I'm speechless . I'm a huge mushroom fan , and this recipe , despite its name , is filled with them . Buy it just for this . Also , the Sloppy Joes pg 34 , taste exactly like the real thing . It's amazing . I know my boyfriend got the book as an instructional manual for making tofu and tempeh and for the mac and cheese recipe he adores .
      • 019 4  This is a wonderful cookbook ! Most of the recipes are extremely easy to make , without tons of ingredients . All of the recipes are delicious ! It contains a large dessert section ( unlike many vegan cookbooks ) . It also includes tips on making soy milk , soy yogurt , tofu , and tempeh . This is a cookbook I can't live without !
      • 020 4  If you judged my copy of this book by it's cover , you would know that it's one of the great ones . My cover is loose , torn in spots , and the pages are full of splotches and blotches . And this is my second copy of the book ! I am about to order my third . This has a lot of basic , helpful , and pretty good recipes . When my kids were small , this book was my vegan cooking bible . I made tofu , soysage , yogurt , and soymilk all the time , and my kids loved the eggless eggnog and ice cream very much . My oldest son asked me to make this eggnog again after not having had it for some 13 years . He remembered the taste and flavor , and that it was very good . He doesn't like all the dairy varieties people have made him over the years , and this was the one he remembered , and wanted . The instructions that come with the recipes in this book are very thorough , and even a very unsure cook can have excellent results . I have a lot of cookbooks by Farmers and all are quite good . This remains a favorite despite the passage of 20 some years since I first discovered it . The pictures and illustrations are wonderfully evocative of a different time and place . We have severe allergies , and I have yet to find a commercial soymilk as good as the stuff I used to make every week . Louise Hagler also has two very good tofu cookbooks that I like , and Dorothy Bates has written many cookbooks . This one is a true classic , and deservedly so . It's quirky and sweet , and holds a special place in my affections .
      • 021 4  A friend bought this for me years ago when I was just starting out as a vegan . The recipes are delicious and very creative . My favorite : the vegan mac and cheese ! This is one of my signature dishes now and is a huge crowd pleaser . Even my non-veg friends love it .
      • 022 4  cooking in a group home for adults with developmental disabilities , i had to create meals that satisfied a number of diet requirements ( including my own vegetarianism ) , health issues , and of course tastes . i'll never forget when jodi started working there ! she'd grown up raising slaughtering her own meat one look at me told her she might want to bring her own food to work . if she could grow to love these recipes borrow my cookbook , anyone can ! you don't have to be a vegetarian to enjoy these recipes ( she accreditted some of her weight loss to the reduction in meats she'd been eating after discovering the joys of other foods ) the recipes are one of the main reasons my poor cookbook is tattered taped together well-loved , but also the wonderful stories within being able to in some small way support the farm itself ( did you know they're one of the oldest intentional communities around today ? they have quite a fascinating history well worth checking out . for a bit more info on them the communities movement in general , check out the intentional communities directory ) ~ a tasty treat for all , regardless of diet preference ~

      • 028 4  Undeniably the best vegetarian cookbook I've ever encountered . The book is packed with recipes using tofu , tempeh , soymilk , and soy yogurt . In addition , it includes no-fail instructions about how to make these products at home . How to make soy ice cream , soy cheese and wheat gluten are also included . This is the most-used cookbook on my shelf and has been for 11 years ! I'm about ready to need a new copy . . .
      • 029 4  This book is great . I am currently living in an area where there is neither a health food store or any great variety in the grocery store . I have found this book a life saver and I would highly recommend it to anyone . Most items can be found at the regular grocery store and those that are not readily available there can be found easily online . I can not give this book enough praise . It is easy to read and follow and gives you a great place to begin experimenting on your own .
      • 032 4  I have many no I really mean Many Vegan cookbooks , but I have come back to this one more often.It is a great softening up to going completely saying you are a big V ( vegan ) , after all the name doesn't say that it is a Vegan cookbook . No eggs no dairy and still is amazing . I like the introduction to wheat gluten , and Tempeh . This book has been last rewritten in 1989 , when products where harder to come by . My regular grocer store has most of these hard to find items . ( I love it ) I have tried vegetarian living way back in the late seventies and had little reference guild let alone cookbooks ! I am now a vegan and boy has life changed , between internet and all my wonderful cookbooks it has been a very small learning curve . I strongly suggest this book as a base for the wonderful life as a vegan .

I have been looking for ways to make some of the foundation items in a veggie lifestyle . this book tells you how to make tofu , soymilk , seitan ( or gluten ) , etc . I was grateful to read how to make them . I know many people would just prefer to buy the ingredients at the store , but there are some of us out there that want to learn how to make the items . It will involve more of my time to make the food , but it will cost much less than to buy it from the store .

I got a kick out of showing my son the pictures of hard-working , good-eating hippies and tell him about my own experiences back in the ' 70s . As a 2 yr vegan , I found the recipes just what I was looking for - simple , hearty , appealing even to omnis , and with ingredients that I can get even in my small town . The explanations about the different foods like tofu and tempeh are great for people new to this kind of eating , but probably old hat to someone who's been veg * n for awhile . But that's OK . It's a bit of history . I think it is a great benefit , and shows the growing acceptance of this way of eating , that you can buy your tofu and soy milk at almost any store around and don't need to struggle as much as these folks did , but it's still good to see how you can make your own if you need or want to . I initially bought the book as a bit of history , with no intention of making anything from it , but the recipes are so appealing , I know I will use it as a cookbook . I have a growing number of veg * n cookbooks and know the disappointment of getting a bunch of recipes that cost a lot to make and use hard to find ingredients . This book is the complete opposite of those kinds of cookbooks . I recommend it for the historical value , for the food history value , and for good recipes suitable for everyone , veg * n or not .

      • 040 4  I bought this book a while back when I first became a vegetarian and was so amazed ! This book teaches you how to make everything from scratch ! Soy burgers , soy milk , etc . TVP , you name it ! And wonderful , actual usable recipes for everything you want and need for vegans !
      • 041 4  I have owned and used this book for many years . I use many other cookbooks as well but I always come back to this one for my favorite recipes . Many of the recipes are very simple and very good . The banana bread recipe is the best I've ever tasted . There are lots of facts , pictures and nice little stories as well . I really recommend it .
      • 042 4  Back in the late 80s , when I first became a vegan , I relied on this cookbook to make a good portion of my meals . The other thing I used this cookbook for was to hone my cooking skills . Once you go through all the recipes like I have , you begin to get the hang of cooking in general . A big plus is the ingredients for most of the recipes in this cookbook can easily be found at a small health food store or regular supermarket . My personal favorites are the fritters and lentil burger . I'm not sure of their exact titles because I don't have the book handy . Anyway , if you're starting out as a vegan or vegetarian and you want to dine on delicious vegetarian food , then this book is for you .

      • 044 4  This book is absolutely neccesary if you are vegetarian , vegan , or simply want some healthier choices . I especially recommend the yeasty cheese by itself or on their pizza and also the barbequed baked beans . They are to die for .
      • 045 4  I don't have The New Farm Vegetarian Cookbook , but I did inherit The Farm Vegetarian Cookbook and it is by far the most ' go to ' recipe book ( and I have a vast collection ) that I use . Among a few favorite's are Chilequiles Estilo de San Luis Potosi and I do use the bean curd , Roberta's Good Soup , Tamale Pie , the Pizza Sauce , Soysage , Corneli's Good White Bread , Macaroni and ' Cheese ' Casserole , Brownies , and those are just a few . I have made my own tofu using this book and what a satisfying thing it is to do ! This is a great book for vegetarians , vegans , ( just a few substitutions for you ) and yes meat eaters . Delicious simple easy to find ingredients . Everyone should own this manual for healthy , conscious , simple , and simply delicious eating . Kudo's to every hand involved in bringing this book to fruition . If you don't have it , buy it now .

Well , my youngest daughter , aged almost - 16 , recently became a vegetarian . I have pulled out my favorite vegetarian cookbooks , which I had saved , and was horrified to not be able to find The Farm's cookbook . I didn't think I'd ever be able to find it to purchase again . I have very fond memories of that book . I loved the Tofu Quiche , and the Nutritional Yeast Gravy . There were lots of other really good recipes , but those are the two that I made ALL THE TIME . I rate this book up there with Laurel's Kitchen Cookbook , and Laurel's Kitchen Bread Book . ( Try the soymilk bread from LKBB - - you'll never think of wholewheat bread the same again . . . yum . . . ) . Well , I've succumbed to the lure of an electric soymilk maker ( not sure if it is as good as making it the hard way . . . ) , and got an updated hand-operated grain mill , and re-upped my membership in the local natural foods co-op , and am having a great old time . This book , like Laurel's books , really shines with the personality and warm kindly philosophy of the authors . Fun to read . I bought Ina Mae's midwifery book when I was pregnant with the above-mentioned child , and it was a great help in my pregnancy and natural , mid-wife assisted childbirth . Can't WAIT to get this book . . . .

      • 050 4  I just wanted some good vegetarian dish ideas . This book impressed the heck out of me when it showed you how to make your own tofu , soy milk and other vegetarian stuff . Though I am not a vegetarian , I am amazed with the details on how to make some of the stuff . Oh yeah , and the recipes seem to be easy enough to follow ! : )
      • 051 4  This vegan cookbook has a lot of user-friendly and kid-friendly recipes . This cookbook does not call for a lot of unusual , hard-to-find ingredients . The vegan macaroni and cheese is excellent , as are the dessert recipes . I've cooked many recipes from this book for vegetarians and omnivores , with equally good reviews from both . I've used this cookbook for over 10 years and just bought a copy to give away to a friend and her family . I highly recommend this cookbook !

      • 055 4  Holy Forrest Gump ! Looking through this cookbook brings back memories of long flowing skirts and hair , free love , and Woodstock . The recipes are great and worth trying . You probably won't like them all , but give them a try and feel free to experiment ! Put on a little California Dreamin ' , light some incense and cook up a storm . Even if you don't actually use any of the recipes , at least it's fun to own a little bit of contemporary history !
